What I made when I was able to go home one weekend:

Pineapple-Stuffed Chorizo Burgers with Avocado Puree, Sweet Potato Chips on a bed of spinach

Like…oh my lord these were outrageous!!! A little bit of a time consumer, but so totally worth it. Every bite was tangy, meaty, salty, sweet, savory and just absolutely fantastic. I highly suggest making these if you’re in need of a damn good burger.


Next we made Egg Bites with Sweet Potatoes and Lean Ground Beef, Sweet Potato Chips and the leftover Avocado Puree, and I love my salsa, so that was a bonus. Can you say YUM?! They were filling and two the next morning for breakfast was just perfect! The recipe was easy; the only longer portion was baking the egg bites.


And another morning:

Banana Vanilla Pancakes with fruit compote, topped with crushed pecans and walnuts. The second time around, we did mango instead of banana and they were both equally delicious as they were filling. They are definitely enough for two to share. This recipe was really easy and totally fun experimenting with. As usual, I had to lick the mixer because the batter was just too tempting.
